eat your heart out thursday bonus - coconut dark chocolate blondies

these are also amazing. when served for desert on friday, they were scarfed up. nothing makes me happier than when people enjoy the food i planned/prepared. it also makes me feel like i'm a rockstar of food.

coconut dark chocolate blondies

8 tablespoons butter
1 cup brown sugar
1 egg
1 teaspoon vanilla
pinch salt
1 cup all-purpose flour
1/2 cup dark chocolate chips
1/2 cup unsweetened shredded coconut

preheat oven to 350 degrees f. butter an 8×8 pan. in a small saucepan, melt butter over low heat. pour melted butter into a mixing bowl and mix in brown sugar until smooth. beat in egg and vanilla. add salt, stir in flour. stir in chocolate chips and coconut. pour into prepared pan and bake 20-25 minutes, or until just set in the middle. let cool before cutting.
