Black Bean Spinach Enchiladas

This is what we ate in honor of the Boy's birthday. It was most excellent.


True Story: The Boy appeared to be done with his meal so I took his plate. That made him upset, so I gave it back to him. Once the plate was back in his possession, he ate a black bean from the table (note: not from the plate). Then fully satisfied, he willingly handed me his plate.

Moral of the Story: Toddler logic is crazy logic.
