Southwestern Empanadas

Empanadas, in theory, have been very appealing to me. Unfortunately every time I've eaten one it has been nothing but ground beef and onions. Depressing, right? A few weeks ago I found some promising ones in the frozen food section of Fresh&Easy. They were Southwestern Empanadas filled with chicken, black beans, bell pepper, jalepenos, and cheese. Delicious.


I tried my hand at making some of my own. The results were alright. I used wonton wrappers and basically used the same ingredients from the Fresh&Easy variety. I'll have to work out the kinks before I post a recipe for filling.
