eat your heart out thursday - homemade mexican food

this past weekend we took part in a produce co-op and were set up with lots of fresh fruits and veggies. as i looked at our box of produce, all i could think about was the great mexican meals we could create. behold two meals that emerged from our bounty:

tamales (store bought) with spanish rice, pico de gallo, and black beans

cafe rio inspired pork salad


we also had friends over for some cafe rio inspired pork tacos and spanish rice, but out of politeness for our guest or just plain fogetfulness no pictures were taken.

did i mention that all the produce in the above pictures, except for the corn, was from the co-op? there is plenty produce left, but more creative measures are needed to barrel through it all.

While there may be no pictures to prove it, my tummy will tell you that those tacos were indeed quite delish.
