Veggie Burrito

Last week Husband and I were able to go on a date, thanks to my parents. We ate at Baja Fresh. I ordered the Grilled Veggie Burger and it was most excellent. Most excellent in deed. I tried to re-create it and came up a worthy opponent to the original.

These bell peppers are simply beautiful.

The ingredients are simple:

grilled bell peppers, grilled onions, grilled green chilies,


black beans,

lettuce,

and pepperjack cheese.

Wrap it all up in a tortilla and call it done. A little sour cream would work, as well, but Husband and I opted out this time around. And actually we've had it twice already this week for dinner. Delicious.
