Fresh Mozzarella, Spinach and Tomato Pizza

A few weeks ago I was mesmerized by the fresh mozzarella at the grocery store. I bought some, along with some ready-made pizza dough, and whipped up a delicious pizza. Paired with some steamed snap peas, it was a very tasty dinner.

It's quite a splurge ($6.49 for 8 ounces!), and I only buy it for Caprese sandwiches, but the fresh buffalo mozzarella (in brine) at Trader Joe's is flippin' AMAZING! Fresh mozzarella is the best. (The smaller, cow's milk mozzarella balls in brine are also realllly delicious.) That pizza looks tasty.
