After making a quick trip to Fry's, I had all the needed ingredients to make a recipe I found here. I made quite a few changes from the original recipe. It was so delicious!
Baked Ziti
12 oz penne pasta
16 oz cottage cheese
1 c + 1/2 c Italian blend cheese (divided)
1/2 c parmesan cheese
1 large egg
3 c fresh spinach
1 batch (minus 1 serving) of mushroom mixture
garlic powder (your call - maybe 3 tsp)
4 c pasta sauce
Preheat oven to 350 degrees. Heat mushroom mixture, then add garlic and spinach.
In a large pot, cook pasta as directed on package until it is tender.
While the pasta is cooking, mix cottage cheese, egg, Parmesan cheese, and 1 c of Italian blend cheese together. Mixed in mushroom mix and spinach. Drain pasta and let it cool a little before mixing it with the cheese mixture as well.
In a casserole dish, layer the pasta sauce and pasta/cheese mixture. Pour half of pasta sauce first, then half of the pasta/cheese mixture, and so on until all is in the casserole dish. Top with remaining 1/2 c of Italian blend cheese. Bake for 45 minutes.

Haha- Fry's where we live is an electronics store. :) Your recipes all look so yummy. I just started my attempt at gardening with a little herb garden, and cooking has never been so tasty. Veggies are becoming my favorite. How are you?
